If they require a larger tank than you have (as mentioned by wodesorel above) then you wouldn't want to add another crab until you have more space for them. Dechlorinator used with tap water is cheaper in the long run. And I can't really think of any benefit to using bottled water.

Older crabs (of all sorts) are more likely to die during molts because molting takes up more energy in larger animals & so they will often eventually reach a size where they just don't have the reserves necessary to pull it off any more. That may have been what the post you read was getting at??

You put the lid on top of the bowl with water and stones? What is the bottom bowl with rocks for? is this the fresh water pool?? That's just how I have my pools set up... I'd tend to say leave it on. Monitor the temp as closely as is practical for a few days to see where the pad brings it up to & then maybe consider getting a thermostat to shut it off if it gets too high (most likely not an issue unless your house is regularly in the 80's though, tbh... Two crabs will be okay in a ten gal for a while, but I'm sure any crab would tell you bigger is better, lol. I think the noise from the bubblers initially puts them off, but they adjust. Now mine will sit dipping their legs in the bubbles, so I assume they're at least okay with it.
