I'm using a 50g tote, I love it. The only downside is that although it's clear, it's not as clear as glass. And it makes it tricky to use heaters because they really don't like sticking to plastic.

I’d be hesitant to dig up a crab too. Isopods would do all your maid work for you.

Two is plenty to start with. And you’ll probably see a spike of hermits needing homes when the new school year nears. Edit: I should ask if you’re keeping them together and if they get along too? If you’re sure, it’s not a problem. But you also don’t have to clean much if the tank is properly set up. Many don’t even deep clean unless there is a bacterial or mold bloom. I use isopods.

They can molt multiple times a year, especially when younger. Are you 100% he’s not molting?

I have two crabs that are always day active and pigging out in the middle of the day. To be honest, in nature they’re nocturnal because the sun would cook them and they’d be easier to spot by day time predators. They don’t hear the way we hear, it’s more like they sense vibrations. Loud noises cause bigger vibrations, soft sounds won’t phase them.
