Welcome to crabbing!
Do you mean when you put it in the tank, it went brown quickly? There really isn't any way around that - the heat and humidity will cause fresh foods to go bad quickly. If you are feeding fresh food, you will need to change it out every day. If you can find dried bananas without any preservatives or additives, you could put those in, they will last a few days.

will frozen work too? I mean that would keep them occupied because that could be an option.

Frozen would be okay, but will quickly warm up ad get brown. Heat should be kept relatively constant. What other types of foods are you feeding them?

They need to have calcium and protein daily. And a varied diet. Check out the care sheets, safe/unsafe foods, food pyramid.

I will offer my crabs over ripe and fresh fruits. Since they are scavengers they will eat what they find. Sometimes they prefer fresh and other times they will go after old mushy stuff. I will usually let fruits in for a day, possibly two days. once they start getting fuzz, caked with sand, or turn to mush I pull them out.

I will occasionally offer them frozen organic baby food as well. We freeze it flattened in plastic bags. That way we can break off little pieces to feed them. A single jar of baby food will last months.

As hermiesguardian mentioned be sure to read up on what you can and can't feed your hermits. There are a lot of things you wouldn't think of that you probably have at home already. There are also a few things that you would think are safe, but aren't. The two lists are pretty extensive but not a fully extensive everything list. They are good to reference for common things around your house as options.
