When a crab molts, it does not leave it's shell. It will be in the same shell when it come up, as it was when it went down. Sometimes they will change right away when they come up and sometimes they won't.
A crab will stay buried the entire time it molts, eats it's exoskeleton, and waits for it's new exo to harden so that it is not easy prey when it surfaces. You will not be able to see what it is doing, and will not know if it is molting, destressing, or just hanging out. It is rare that any exo is left for you to find, and if it is, it is usually buried. Your sub needs to be sand castle consistency so that their tunnels and cave don't collapse.
As long as you have enough substrate and your tank is not over crowded, crabs generally don't dig each other up.
When you say you are feeding store bought food, do you mean commercial pellets? Do you give a source of protein and calcium daily? What brands of dechlorinator and salt do you use?
