im not a plant expert. one looks like grass. another is long and creeps on the ground and has circular leaves. and then one more stands upright and has soft thin pointed leaves and the roots are straight and stiff

I would personally play it safe and say no

There are a lot of safe edible weeds, better known as 'harvetables', but you have to be able to identify what you are collecting with certainty to know if it is.
